Pizza Journey

It was a cold and blustery weekend so what better time to fire up the oven, get the lads from work over and test out some new recipes. This weekend I wanted try the house-made chilli and fennel salami and the mulga smoked chorizo that myself and Team Swine produced over the June long weekend. Over the past week I also made a batch up Chilli Jam from a late harvest of winter chillies.

The morning started with a 2hr Mountain bike adventure up at Murray Bridge, checking out the new network of trails. It was then back in the car and race back home with 50 mins to spare, before the hungry hoards arrived. After a long fire up time (outside temperature was about 10º), the oven hit 450º and it was time to start slinging.

Pizzas Created

Caramelised Onion with Marinated Goat Chèvre and Fresh Rosemary
48hr rested Vera Pizza Napoletana dough
Brush on Roasted Garlic Oil.
Generous handful of prepared Caramelised Onion.
Cook in oven for 90 seconds to 2 minutes.
Remove and cover with crumbled La Casa Del Formaggio Goat Chèvre, shaved parmesan and fresh rosemary sprigs.

Hellboy
48hr rested Vera Pizza Napoletana dough
Spoon on a ladle of tomato Passata.
Add a good covering of thinly sliced house-made Fennel and Chilli Salami.
Top with torn La Casa Del Formaggio Bocconcini.
Finish with a good drizzle of house-made chilli infused honey
Cook in oven for 90 seconds to 2 minutes.
Serve with grated parmesan and dried oregano

Prawn Star
48hr rested Vera Pizza Napoletana dough
Spoon on a 1/2 ladle of tomato Passata and 1/2 Chilli Jam, mix together on the base to that it covers within 15mm of the edge.
Cover with pre-marinated garlic prawns.
Top with torn La Casa Del Formaggio Bocconcini.
Cook in oven for 90 seconds to 2 minutes.
Serve with grated parmesan

Hell Niño (Spanish Hellboy)
48hr rested Vera Pizza Napoletana dough
Spoon on a ladle of tomato Passata.
Add a good covering of pre -oven roasted house-made Chorizo.
Top with torn  La Casa Del Formaggio Buffalo Mozzarella.
Finish with a good drizzle of house-made chilli infused honey
Cook in oven for 90 seconds to 2 minutes.
Serve with grated parmesan and dried chilli flakes.

 Burrata with Buttered Beetroot and Balsamic
48hr rested Vera Pizza Napoletana dough
Spoon on a ladle of tomato Passata.
Brush on Roasted Garlic Oil.
Generous handful of prepared grated beetroot in butter and verjuice
Cook in oven for 90 seconds.
Remove, add Burrata ball, chop into 6 pieces, letting the goodness inside spill across the pizza. Fire for another 45 seconds.
Serve with grated parmesan, fried rosemary leaves and Murray River salt flakes.
